It has been a very productive work week here in Huntington Beach. We all needed to stop and celebrate! What better way to do so then have friends over for dinner? We set the table and lit some candles. Wiped down counters and swept the floor. Tonight, we fired up the BBQ and combined some Community Eats flank steak with our friends the Scanlan’s infamous fajita recipe and voila! We transformed simple ingredients into a delicious dinner. My philosophy on cooking is “keep it simple.” I am busy. You are too. The old adage of “less is more” is my modus operandi in the kitchen. And it works! A few quality ingredients will go a long way.

And the best part….laughs. Lots of them. Good friends make the heart feel glad.
When we gather, we come alive. We mean something to each other. We listen, we are heard. We eat and commune and our hearts are full of thanksgiving. This November, I say thanks and a great big CHEERS to friendship.

Appetizer: Bardwell Bean Dip, organic tortilla chips and serrano salsa (found at Trader Joe’s)
Main Entree: Flank Steak Fajitas with avocado salsa. (Grilled flank steak served on small, soft tortillas, topped with avocado salsa and optional sour cream).
To make the Avocado Salsa: Mince 1/2 a red onion, cilantro and a jalepeno (You can put as much or as little jalepeno as you can handle and/or enjoy). Roughly cube 5 ripe avocados. Chop 2 medium tomatoes and combine all the ingredients into a bowl. Squeeze fresh lime juice to taste and sprinkle on some garlic powder and salt to your liking. Stir it up until well combined and flavorful. Do not make this too far in advance or the avocado will start to turn brown.
To make Bardwell Bean Dip: (Warning, this is a cheater food for any of you who are paleo or dairy free. You can thank me after you eat it…)
Melt 1 Tbsp grass-fed butter in a frying pan. Saute some minced onions until translucent. Add a can of organic, refried beans and stir well on medium heat. Sprinkle in 1 tsp each of cumin and garlic powder. Add some of your favorite sharp cheddar until melted and well combined and enjoy your new favorite bean dip.
