I think I could eat french fries all day. I think it’s the salt on them that I’m so obsessed with. I once had a Dr tell me my blood pressure was TOO low… that I should eat more salt. So that’s what I play over and over in my brain whenever I feel like adding a little more salt to my food. NOT: this is not health advice – just a confession!
I digress… these baked veggie fries are my regular go-to when I’m wanting that salty/crispy crunch. The contrast of the sweet carrots with those complexly delicious parsnips is just divine. They are ready in just 25 short minutes, and go well with almost any entree… or even by themselves with a little dipping sauce ( of your choice).
These were most recently made during a 5 day trip to New York for Fashion Week. YWAM and Models for Christ ( two amazing ministries of which I am both a part of!) team up to serve the Fashion crowds that gather twice a year to view, critique and buy the latest Collections. For 10 seasons myself and some friends have been privileged to work backstage as a ‘dresser’, where we literally dress the models before they walk the fashion show runways. It’s a really special way to serve these precious young women ( models). After a long day of dressing models and attending Fashion Shows, I gathered with 5 lovely ladies to share a meal together. They are all serving in various ways in Fashion… and are truly remarkable women living in a way that loves Jesus and other so beautifully. More to come on them in another post.
