Crock-Pot – the working mom’s best friend!
On Wednesday nights I drive an hour into the city to teach Fashion Illustration at a design school in San Francisco. I often make this flavorful meal on those nights, so it’s ready for my family of boys to eat while I’m gone!
This is also an excellent ‘Feed a Crowd’ dish. My friend Breanne makes her own version of this dish and serves it buffet style at relaxed Sunday night gatherings in her home.
I have it photographed here with a cabbage leaf ‘tortilla’ around it. I also LOVE to just eat it in a bowl with sliced avocado on the top. Simple and really really yummy!
