Apple Cider Salad

This simple salad recipe is a combination of some of my favorite Fall flavors. I love when I hit the salad jackpot and just want plate after plate. For me, this salad it it!

For me, Salads are their very best when the ingredients come from a local radius and are seasonal. I love to shop my local KTA grocery store here in Hawaii- it’s really almost like a commercial version of a farmers market! SO local.


I recently made this for a YWAM Lovefeast, we put the salads directly onto the table and it looked so cool.





Add in roasted Butternut or Acorn Squash if you have it, and of course grilled chicken added makes this a great meal.



Spiced Nuts take this Salad to another level. I have never found a better recipe than this one from Againstallgrain.com


Apple Cider Dressing:

( inspired by Joanna Gain’s recipe)

1/2 cup light Olive Oil or Avocado Oil

4 Tbsp Apple Cider Vinegar

Juice of 1/2 Lemon

1 1/2 tsp Dijon Mustard

1 TBSP Honey

cracked black pepper and salt to taste


**Whisk together until fully combined. I actually prefer to use an immersion blender here so it gets really smooth.

– will keep in the fridge for up to one week

Ingredients

4 cups Mixed Greens

Heirloom Tomatoes

Maui Onion ( or other sweet onion)

Gala Apple

Coastal Cheddar ( or other aged cheddar cheese )

Spiced Nuts ( see above)

Apple Cider Dressing (see above)


Instructions

Very very thinly slice all the salad ingredients. Toss in a bowl and allow to sit, undressed, at room temp for 10-20 mins. This allows the flavor to develop and makes all the difference! Before serving, lightly dress the salad and add the chopped spiced nuts.
