Brunch is one of my favorite meals to connect with old friends over. I find starting the day bright and early with good friends feels relaxed and a little bit easier to cope with as a host than dinner. I usually start a brunch around 10am - so I’m not too rushed in prep.
This breakfast sausage pie as one of my favorite things to serve, it comes together with just three ingredients and taste so so good.
I recently served it at brunch with our friends the Aurther Fam. Dear friends we’ve known for years and years. Special times meeting new spouses, bigger children, sharing the stories of life that’s happened since we were last together
Ingredients:
1 pound organic American Breakfast Sausage
1 large sweet Potato , grated
10 free range Eggs
Salt and Pepper to taste
Optional add-ins:
1 tablespoon Dijon mustard
1 tablespoon fresh Thyme
Method:
Preheat oven to 400.
In a large sauté pan on medium high heat cook the American breakfast sausage in 1 tablespoon of oil until fully cooked through.
Add in the grated sweet potato and stir thoroughly.
Cover and allow to cook for about 10 minutes until the sweet potato is softened.
Whisk the eggs together in a large bowl adding in herbs and Dijon mustard, salt and pepper.
Pour the eggs over the sausage mixture and bake in the oven for 20-25 mins until browned on top.
Serve with sliced avocado and hot sauce.
