I really love a good mocktail, especially when it’s full of flavor and you have to sip it… Just like you would a cocktail. Slow and enjoy.
If you’ve been following me on social media, you will know that this week I’m really having a Shower Tree flower moment, so this cocktail was definitely inspired by that!
The combination of sour Lime with spicy Ginger, all brought together with this beautiful Butterfly Pea purple well- it shimmers !
I never get tired the moment when the Lime is added to the Butterfly Pea- the color changes! It’s so beautiful.
Ingredients
One cup sugar
Eight limes
1 Lemon
2 inches of root ginger
1 tbsp Butterfly Pea powder
Lemoncello Lacroix ( ideally, but other flavors work too)
Method
To begin, in a small pot combine one cup sugar with one cup water, and bring to a simmer on the stove. P.S. this is also called making a simple syrup 😊.
Whisk in 1 tablespoon of Butterfly Pea powder.
In a separate bowl, juice the Limes , Lemon and finely grate the Ginger, skin and all. Allow that mixture to marinate for 15 to 20 minutes, and then sieve through a cheesecloth squeezing to make sure you get every drop of spicy juice. This will give you a very, very sour+spicy base.
Finally, combine your Butterfly Pea Simple Syrup with the Ginger-Lime juice.
To serve:
Poor about 1 ounce of your Butterfly Pea/Lime syrup in the bottom of a pretty class. Top with ice, and finally your Lacroix.
Garnish with Shower Tree flowers or any other edible flower you can find.
Enjoy xo Beth
