Chocolate Overnight Oats (GF)

Jon and Jenny Gilmore have a coffee stand with pour over Fair Trade coffee and the BEST made to order Paleo Waffles and other clean-eating treats. For those of us who are staying away from refined sugars and most grains… oh boy – Rooted Coffee is like stepping into heaven! You can find them at the Farmer’s Market in Walnut Creek and at most Crossfit Events in the NorCal area. Oh yes, did I mention that they are Crossfitters!? Their friend does all the roasting, and they deliver freshly roasted beans or cold brew coffee right to your door. Oh. My. Goodness.


My husband Jeff’s job puts him at many of these same events, and he comes home with stories about the yummy things he ate from their coffee stand. A few weeks ago I emailed Jenni begging her for the Marley’s Coffee Overnight Oats recipe. Jeff was less than pleased with all of my attempts to make up my own recipes… he wanted THIS ONE! Thank you so much Jenni for sharing this winning recipe with our family. I’m thrilled that she’s okay’ed me to share it with you too!

Marley’s Chocolate Overnight Oats



…these are SO GOOD! Mix up a triple batch and store it in jars for busy weekday mornings… or as a trendy mason jar make ahead brunch treat too!

Ingredients:

  • 1 cup gluten free whole raw oats

  • 1 cup almond milk

  • 1 Tbsp chia seeds

  • 1/2 Tbsp cacao powder

  • 1/2 Tbsp agave or maple syrup (depending on how sweet you like it)

  • top in the morning with sliced bananas and shredded coconut


Instructions:

  1. Measure everything into a mason jar.

  2. Give it a little mix, cover, and let it sit in the fridge overnight.

  3. In the morning, top with sliced banana and coconut. Oh my goodness, how easy was that?!
