Christmas Eve Sugar Cookies




Last minute baking! I’m always doing it! I know the holidays are here when I’m the last one up in a quiet nighttime house.. baking away.

These Roll-Out Cookies are here to save your Christmas! With no required chilling time, you can have these on your Holiday Table in about 45 minutes if you move fast. Maybe Santa will even get one as he pops down your chimney!

 to decorate these, I used washed raw sugar with a few drops of natural food dye mixed in. just sprinkle the colored sugar on before baking



One tip: I have made many sugar cookies that do not hold their pretty shapes once you cook them. The trick is to add enough flour that the dough is very firm. Don’t worry, there’s enough sugar in any cookie to balance out that much flour!

Ingredients

1 cup Grass Fed Butter, Softened

1 1/2 cup Raw Sugar

1 Free Range Egg

1 tsp Vanilla Extract

1/2 tsp Almond Extract (Optional

)2 3/4 cup Organic White All Purpose Flour or Spelt Flour (Maybe add a 1/4 cup if you need in order to get a really firm dough)

2 tsp Baking Powder


Instructions

Beat Softened butter and raw sugar together with a hand mixer (Or some good Christmas elbow grease) until light, fluffy, and creamy. 

Then, add and beat in egg, vanilla extract and almond extract until well incorporated.

Mix the all purpose flour and baking powder in until fully incorporated.


No need to chill, just begin rolling!


Roll these out, cut shapes, and bake on cookie sheets lined with parchment paper.

Bake @ 400 for 6-7 minutes.


Decorate as you feel inspired!
