
Cabbage, in my opinion, is deeply under-appreciated. It’s a super food really. Containing significant amounts of Vitamins C, K, A and B its not wonder this veggie is a popular health food!
I love to eat it like this, raw and shredded very thinly with lots of fresh flavors added. While this salad goes beautifully with Mexican flavors or grilled chicken and fish, I often end up making extra and eating it for lunch with avocado added to it the next day.
The use of a food processor is recommended for this recipe. If you don’t have one, sharpen a long knife and carefully slice the cabbage as thinly as possible.

Ingredients
1/2 head of red cabbage
1/2 head of green (or white) cabbage
1/2 a red onion
4Tbsp olive oil
Juice of 1 lime juice of 1 lemon
1 Tbsp honey
a good handful each of chopped FRESH basil and mint, or you could do cilantro and basil or cilantro and mint... you get the idea!
1/2 tsp sea salt
Instructions
Using your food processor, shred the cabbage and onion on the thinnest setting.
In a bowl, mix together the remaining ingredients until well combined.
Pour the dressing over the cabbage and onion, then give it a good toss.
That's it! Your salad is ready!
