Happy 4th of July everyone! Guacamole is most certainly an American staple… yes yes, I know it’s actually Mexican… but we’ve adopted it pretty much haven’t we?! With every grocery store and gas station carrying pre-made Guacamole… the real homemade stuff is becoming pretty special. You will be surprised at how simple our recipe is, taking just a few short minutes to whip up.
They key is having really ripe Avo’s. I usually purchase 5 or 6 at a time at varying degrees of ripe-ness. That way they can slowly ripen in my fruit bowl throughout the week. They are perfect when there is a slight give in the Avocado under the push of your thumb.
Ingredients
2 ripe Avocados
1 Tbsp chopped cilantro
Juice of 1/2 a lime
1/2 tsp Celtic Sea Salt ( or your favorite salt)
1 tsp honey
Instructions
Cut the Avo's in half and use a spoon to scoop the flesh into a medium sized bowl.
Discard the skin, but keep one of the large avocado seeds, you can put this INTO the finished Guacamole... it keeps the Guacamole from browning! Don't eat it... just keep it in there until you serve the Guac.
Add all the other ingredients and give it a good smoosh together using a fork. Once you reach your desired consistency, stop smooshing.
Serve with Sliced Jicima and Cucumbers. Happy eating!
