Now that Memorial Day is over… its Summer for those in the Northern Hemisphere! Jeff and I just spent 10 days at the YWAM University of the Nations base in Kona, Hawaii. And boy did we soak up the sun! Divine! My brother Johnny and sister-in-law Jenni live there as well as many dear friends. Jeff and I spent 5 amazing years there ourselves.
We experienced 4 very special days staying with Johnny and Jenni in their home. They have 4 young people living with them, all who serve in a Missionary and Ministry role with YWAM. I love the covenant of mutual respect and humility they live by. They also have alot of fun!
While we all sat at the table together, my sisters and i whipped up this fun Salsa. It was a perfect summer afternoon with the best friends in the world: sisters.
Ingredients
3 Large Ripe Tomatoes
1 Medium Red Onion
1 Medium Mango
1 clove Garlic
3/4 tsp Sea Salt
1/4 cup Diced Cilantro
1/4 tsp Red Chili seeds
Instructions
Dice everything up (make sure you dice it all small.. better for dipping!)
Add the ingredients into a nice bowl as you chop them.
Then add the salt and spices and mix it all up!
I loved making this… and photographing it on the sidewalk with the good old iPhone!
