Minted Roast Potatoes





I have a few easy side dishes up my sleeve. Maybe you do too ! This combo of roast Potatoes, Garlic and Mint is a winner for me every time.


Make sure your oven is screaming hot and don’t be shy with the Olive Oil. Also, a nice flaky Salt goes a long way in elevating this dish.




Ingredients

Little Golden Potatoes

( you can use any variety really , that’s just my preference because they get so creamy)

Olive Oil

Mint - one big handful, chopped.

Garlic - 1 clove per pound of potatoes, grated or crushed

Good Sea Salt


Method

Preheat the oven to 425.


Line a baking sheet with parchment paper.


Rinse the potatoes and slice in half.


Drizzle very generously with Olive Oil and a good sprinkle of Sea Salt. This is what makes them crispy so you can be shy with the Oil.


Roast in the oven for 20 mins , give them a good stir and then pop them back in for another 10 ish minutes until they are really golden brown and crispy.


Place the garlic and mint on a large platter, with one final drizzle of Olive Oil (about 1 TBSP). Toss the hot Potatoes in it , and finish with Salt if you’re feeling Salty… I always am 😆


Serve with steak, chicken, fish, whatever your jam is !
