All children I know love to eat chicken nuggets… everyone else I know loves to steal a bite of them. In fact last night we stopped at McDonalds in a feeding emergency – three hungry boys and no where else on the long drive from London to Cornwall for my brothers wedding… what are you gonna do?! I told Jeff I would ‘never eat this junk’ and didn’t order anything. THEN I ATE TWO OF RIAH’S nuggets. Busted.
We all know they are nasty things, ground up chicken ‘parts’ , very un-organic mom. Here’s my take on them… Riah helped me make these!
Ingredients
4 Boneless Skinless Chicken Breasts (Organic if possible) Cubed in 2 inch pieces
1 Egg, Beaten
3/4 cup Pecans, Ground (just grind 'em up in your coffee grinder)
Sea Salt
Pepper
Drizzle of Extra Virgin Olive Oil
Instructions
With a baby sitting on the counter to help… dip each piece of chicken first in the egg and then roll it (all sides) in the Pecans
Place on a greased cookie sheet and repeat with every piece. Sprinkle with a little sea salt and black pepper and then a drizzle of olive oil.
Bake for 15 minutes at 400 F or 200 C. They will be golden brown!
Serve with ketchup, homemade ranch and sliced veggies. Kid Heaven! For grown up fun, throw this on a bed of greens with berries, cucumber and some roasted butternut.
