Poi and Blueberry Smoothie

Kona, Hawaii has been my home for the better part of 12 years, but it’s taken me until now to try Poi. Well, now I’m obsessed. We’ve been buying the Costco sized bags of it!


Baby Harvest LOVES it -it’s actually commonly a first food for Hawaiian babies. We’re in the middle of our January Whole30 and I’ve been searching out new starchy vegetables, trying to not make sweet potatoes and EVERY meal! Taro is a fun one. You can find it in most Island grocery stores and also health food stores, but if all else fails you can order it in powder form from Amazon and mix it up yourself.


Poi is an Island staple, renown for its superfood and probiotic benefits. Made from pounding the Taro root and then allowing the mixture to ferment, this complex carbohydrate tastes a little sour and has a paste like texture.  Poi carries a HUGE amount of Vitamin B6 which supports everything from our immune systems to emotional health. It’s actually pretty bland, which makes it the perfect addition to smoothies. It also adds an amazing creaminess.


This Poi Smoothie is Whole30 and Paleo compliment. I like to make it either for breakfast or for post workout recovery, the Poi will give you a nice carb boost and the fats in the coconut milk will give you long lasting energy. The B6 and fats in here are amazing for boosting breastmilk production too… for all my nursing mama friends.

add it all in the blender and blend away!



Ingredients

1/2 cup poi

3/4 cup unsweetened almond milk

3/4 cup canned coconut milk

1 cup frozen blueberries

1/2 cup ice


Instructions

Measure everything in your blender and blend until really smooth. Serve immediately
