Today we kick of a two week mini-series , ‘Transitioning Your Family to Eating REAL FOOD ‘. My friend Brittny Debonis came to mind immediately as I looked for healthy mama’s to contribute to this series, and I know you will LOVE her ideas and recipes! Brittny is a genuine and deeply kind woman who oozes creativity, and every time we see each other I come away with 5 new ideas that I want to create out of! She is a GIFTED photographer, and who she is totally comes through in her beautiful photos. “As a mother of 3 kids under the age of 4, healthy eating has taken a backseat, but this smoothie is something I manage to whip out pretty often.I LOVE the Popeye’s Bruiser! It’s balanced with healthy fats, protein and LOTS of vitamins and antioxidants.📷( photos taken as the layers go in)
I don’t even have to sneak in the greens! In our house it’s proven more effective if I have each of the kiddos help me pack in the spinach! It’s their favorite ‘job’ and they put in way more than I would! I like to pretend it’s a nap and a workout in a glass– it gives me the boost I need to chase them around.”
Smoothies are ready!
Ingredients
Handful of ice (2-3 cubes)
1 1/2 C Organic frozen or fresh blueberries
1/2 C Other fruit (I used some ripened cut strawberries that needed to go.)
About 3/4 cup of coconut water
About 1/2 C almond milk
1/3 Avocado (or a TBSP of almond butter if I'm out)
1 big scoop of vegan vanilla protein powder (I am currently using VEGA.)
.Approximately 1C packed fresh spinach leaves
Instructions
Pull out the blender and add to it:A handful of ice (2-3 cubes) and fruit.
Add coconut water and almond milk until the liquid reaches about 1 cm from the top of the pile (about 3/4 cup of coconut water and 1/2 cup of almond milk)...
Throw in the avocado or almond butter...
Then 1 big scoop of vegan vanilla protein powder...Blend...
NOW pack in that Popeye punch of Spinach! ( Approx 1 CUP of packed fresh leaves, or 4 little toddler girl handfuls )
Blend until smooth, fill up the cups and enjoy!
Tips: Let the kids help! 'Grow' your smoothie ( Increase the amount of each ingredient by 1/2 again) and fill a couple small mason jars for quick smoothies later!Measure with your eyes! (saves a heap of dishes!)
