What's more Hawaiin than a Mai Tai! In my years of Private Cheffing this has been the top requested 'Cocktail Hour' drink, so I had to figure out how to make one that I could proudly call my own!
Typically this drink is super sweet and VERY much full of liquor. The Liquor part hasn't changed, my version is still strong, but I've adjusted the recipe to be a little brighter and less sweet.
Since this a Rum based drink that uses a few different varieties of liquor, the quality of your liquor really does matter. My preferred brand is Big Island distilled by Kuleana Rum Works, available at all major grocery stores here in Hawaii. Use what you prefer tho!
I love to purchase the Orgeat, Orange Curacoa and Rum at Kona Wine Market. They're so helpful and carry very high quaility liquors.
Anyway, this is where I landed on the Mai Tai that I love! The Pineapple and Lime really brighten and lift the flavor here and finishing it with a sliver of Orange and Flowers bring the wow factor every time.

My Mai Tai
makes 1 drink
1 ½ ounces white rum
½ ounce lime juice, fresh squeezed
½ ounce orange curacao or other orange liquor
½ ounce orgeat syrup (use Almond or Macadamia Nut )
1 oz pineapple juice
1tsp raw sugar
ice
¾ ounce dark rum
Slivered Orange and edible Flowers to serve
Method:
Measure everything into a large mason jar or cocktail shaker.
Put the lid on and shake with Ice!
Pour, over ice, into a 'Low Ball' Style glass and garnish with orange slices and flowers.
