Full Disclosure // I created this by accident. Day 14 of a Whole30, when you're really bored with cooking and anything mildly sweet tastes like heaven. The flavor combo here is shocking and you may want to eat it with a spoon.
I love this on my Big Island Strawberry Salad. It's equally good on chicken or used as a veggie dip.
Ingredients:
1 cup hulled strawberries (about 8 big ones)
1/2 avocado oil or light olive oil
1/4 cup balsamic vinegar
Juice of 1/2 lemon
1 mejool date (pitted)
1 1/2 tsp Garlic Powder
1/2 tsp sea salt
1/4 tsp course ground black pepper
Measure everything into a blender ( I love to use a Vita-mix). Blend on high until this dressing is fully emulsified and smooth. This week keep in the fridge for up to one week!
