Every few years I hit a wall with meat and crave huge amount of veggies. I'm currently on one of those kicks and have circled back to Vegan Taco recipe I created a few years back.
I just feel like Tacos are always so good- nobody is every disappointed when you bring out this food!
This post is basically my 'how to' for vegan tacos with a list of links the recipes I use when I make them!
Vegan Tacos:
To make these Tacos there are three key items you will want to make ahead. Each requires a tiny bit of effort, but very little skill. So don't worry. It all comes together in about 45 mins. Less once you've done it a few times.
This meal will be much easier if you have use of a Food Processor, Vitamin, and an Instant Pot.

Here's the rundown of how I pull these three recipes together in 45 mins or less:
Read through all three recipes and get all the ingredients out.
Soak the Walnuts for the Vegan Taco Meat
Get the Tomatillo's under (or on) the Grill for blackening.
Follow the recipe for Paleo Nacho Cheese Sauce and get it going in the Instant Pot.
Make the Tomatillo Salsa
Drain the Walnuts and make the Vegan Taco Meat according to the recipe.
Once the Taco Meat is done, finish up the final step (blending) of the Nacho Sauce.
Lay it all out with toppings etc - you're gonna love it.xo
Once you have these recipes made up, place them out buffet style with avocados, lettuce cilantro, fresh limes and warmed taco shells. Let everyone built their own!
Don't forget to use your favorite Hot Sauce!
